I was just getting ready to leave my house to go to the bank.... When I heard the phone ring. It was Miss Christina.. She said, " Your Home " I was all yes Im home... She was all Can Me and Beth Come in.... I was all sure where are you... They were Outside..... Yippie...<br /><span style="color:#ff0000;">So Beth Finally got to see my house... She loved it... I was so happy they came by..... We all went to lunch and then got the great idea to make some wreaths.... So we all went to Michaels and got the stuff to do them..Yippie.. And good ol walmart for our fabric.....<br /></span>We all came back and put our Busy lil hands to work... We all had a blast.... Was much needed....<br />We ended the night off with a great dinner... I made BBQ chicken, Mashed Potatoes, gravy and some Yummy Cranberry Stuffing... Thought you guy's would like to try it also.....<br /> Mmmm Mmmm gooooodddd =)<br />~*~* Enjoy *~*~<br /><br />Cranberry-Sage Rolled Chicken<br /><br /><br />Ingredients<br /><br />4 Boneless, skinless chicken breasts<br /><br />1/4 Cup butter or margarine, divided<br /><br />2 Large shallots, sliced<br /><br />1/2 Cup dried cranberries, chopped<br /><br />1/4 Cup chopped fresh sage leaves<br /><br />3 Tbsp. dry breadcrumbs<br /><br />1/3 Cup chicken broth or white wine<br /><br />2 Tsp. chopped fresh sage<br /><br />Directions<br /><br />Place each chicken breast between 2 sheets plastic wrap or wax paper. Pound gently to flatten to about 1/4-inch thickness. In small skillet or saucepan, melt 2 tablespoons of the butter over medium heat. Add shallots and 1/3 cup of the cranberries. Cook and stir 3 minutes or until shallots are tender. Stir in 1/4 cup chopped sage and breadcrumbs.<br />Place 1/4 of sage mixture on each chicken breast, leaving 1/2 inch on long sides. Turn long ends in to cover filling; press lightly. Starting at short end, roll chicken breasts to enclose filling. Secure with twine or toothpicks. Chop remaining 2 tablespoons cranberries; set aside.<br />In medium skillet, melt remaining 2 tablespoons butter over medium heat. Add chicken breast rolls. Cook 3 to 5 minutes to lightly brown. Add broth, chopped cranberries and remaining 2 teaspoons sage; bring to simmering. Cover and reduce heat. Simmer 12 to 15 minutes or until chicken is 170°F. in center. Remove and discard twine or toothpicks to serve.
