Found this Recipe on line.. Thinking about making it.. It lookss soooo good too.. Thought you guy's would like to try it also.....

Cranberry-Sage Rolled Chicken


4 Boneless, skinless chicken breasts

1/4 Cup butter or margarine, divided

2 Large shallots, sliced

1/2 Cup dried cranberries, chopped

1/4 Cup chopped fresh sage leaves

3 Tbsp. dry breadcrumbs

1/3 Cup chicken broth or white wine

2 Tsp. chopped fresh sage


Place each chicken breast between 2 sheets plastic wrap or wax paper. Pound gently to flatten to about 1/4-inch thickness. In small skillet or saucepan, melt 2 tablespoons of the butter over medium heat. Add shallots and 1/3 cup of the cranberries. Cook and stir 3 minutes or until shallots are tender. Stir in 1/4 cup chopped sage and breadcrumbs.
Place 1/4 of sage mixture on each chicken breast, leaving 1/2 inch on long sides. Turn long ends in to cover filling; press lightly. Starting at short end, roll chicken breasts to enclose filling. Secure with twine or toothpicks. Chop remaining 2 tablespoons cranberries; set aside.
In medium skillet, melt remaining 2 tablespoons butter over medium heat. Add chicken breast rolls. Cook 3 to 5 minutes to lightly brown. Add broth, chopped cranberries and remaining 2 teaspoons sage; bring to simmering. Cover and reduce heat. Simmer 12 to 15 minutes or until chicken is 170°F. in center. Remove and discard twine or toothpicks to serve. If desired, cut roulades into slices before serving or serve each whole.

So, My mom and I went and took our first class for our Day-Care :) Yippie.. Yippie... It was fun.. I really Enjoyed it.. Neat info =) One step closer ;-) We both got our
CPR, First Aid and Health & Safety Traning
Certificate of Completion....... Yippie.. How exciting =)
In our packet they put in a lil Poem . I think its so cute.. It say's :

greatest silence

Bryan and I Watched this tonite... Really Really good.. If you have HBO.. Please try and watch it.. Unreal.. Is all I can say... Its sad to see what all goes on in the Congo.. and other places like it.... I truly feel for these people "Women and lil girls"... Makes me wish I was rich and could give to help their women... Be it clothes, books, having some one to talk to .. and a place to go where they're not afraid, and know one could harm them... No one should ever have to go through what these lil girls and women have went through..
